Can't belive you just left out Rare Arms
I know it's hella expensive, but it's literally the most realistic airsoft gun yet.
Guns without a blowback effect could not be considered as "realistic" a priori
I kind of expected to see Rare Arms, ViperTech or BO Manufacture (for the Chiappa Rhino revolvers) in this video.

Not gonna lie. My edc is a staccato c, when I saw I could get an sti dvc 3 gun in airsoft I jumped on it. It was a Boneyard gun, my first airsoft gun too. It was just missing a spring and the safety was garbage. I replaced the safety with an actual staccato safety lever after a ton of fitting. Since then I bought 2 aeg augs, an a1 and a commando xs. Swapped the lower handle on the xs with the factory handle from a real stg 77, added a emg suppressor/tracer unit. It's pretty awesome and I can swap in the full length barrel quick due to the aug design.
If only I could find a wood kit for the Umarex cowboy rifle, it would be even more realistic.
Sad that you didn't mention the GBLS DAS series here..

That are some good (and interesting) choices, which I mostly agree with. Just some slight criticism here and there. Especially the mentioned GHK replicas. The AKs have no full travel bolt AFAIK and the trigger pull of the Glock highly depends on the amount of gas in the magazine. The new aluminum slide-version is said to fix that issue. Also, I think that the Umarex rifle and revolver both have safeties, that the real steels don't have.
But after all airsofters like me, should be happy with every bit of realism we can get 😃

What about the Double bell Kar98? Specifically the gas shell ejecting wood stock version
What about Daytonas aha minus the line, maybe a c02 adapter can be modded on like a bolt, although it would be very gas inefficient.
