This isn't just happening to football clubs, the really boring corporate-looking designs are happening to a lot of logos/designs.
The only thing i found (in 3 minutes of observation) in the UCL logo is the last one going from black to very navy blue
Its all about money and branding

A great video about why Football Logos are Boring – without even mentioning Birmingham City which must have the worse club logo ever. Maybe they had a competition at the kindergarten for that one !!
Sheffield Wed's Chansiri's decision to go against the trend by changing from the owl 'squiggle' (arguably an ideal design for the modern era) back to the old crest which the club have now, while admirable on a purist level, demonstrates the chairman's lack of football business acumen and desire to do things his way at any cost.
It's unfortunately symptomatic of the ongoing dumbing down of popular culture in general.
Another factor is scalability. Like you said in the video, logos are needed for different purposes now, and they have to look good when shrunk down, especially in this digital age.
I love the more simple logos, especially juventus. That’d a very clever one.
Football will never be pure corporatism, and that’s why these modern rebrands are normally poor. Football crests are their own, unique form of art. Bring back the old Juventus and Internazionale crests!
The old Arsenal logo is one hundred times better than the new one.

Yeovil's is the worst thing I've ever seen in my life. Nothing to do with Yeovil, Somerset or South West England. Except the gloves being a reference to their nickname

I mean it's generally to make them more accessible, and flexible for different use cases, with alot of it for use in digital promotion. It does loose some of the historic and flamboyant stylings and now it sort of ends up too minimalist. I think there can be a balance between the two. But also there are regulations for what you can do to kits. (Wrote this too quickly as it covered it much later in the vid aha. )
9:07 – that's not entirely right, I think Bayern's logo between 1939 and 1945 looked a bit different ;>

Club logos went from representing the city to trying (and succeeding in) being big and iconic, like the hig european clubs who have made their badges iconic like Real Madrid, Barca, Juve, Inter, Man U, Liverpool and now they've become so iconic, they're making them more simlle so they are just flashy for the marketing
Liverpool's hated new logo on the shirts which is nowhere near as iconic as the official, inter, Juve with just a J, etc. just made to display simple flashy pictures meant to sell sell sell
If a club or a brand has its initials, it doesn't then need to include its name (I'm looking at you QPR).
